Asian Salmon with Farro “Fried Rice”

Salmon Ingredients:

  • 4 Atlantic Salmon Fillets with skin on
  • 2 tablespoons honey
  • 1 teaspoon minced ginger
  • 1/4 cup Tamari soy sauce, or you may substitute coconut aminos
  • 2 minced garlic cloves
  • black pepper to taste

Farro “Fried Rice” Ingredients:

  • 2 cups of farro
  • 8 cups of water
  • 2 teaspoons of salt
  • 2 cloves of garlic, chopped
  • 4 scallions, chopped
  • 1 cup carrots, shredded
  • 1 egg
  • 1 cup frozen sweet peas
  • 2 teaspoons minced ginger
  • 2 tablespoons rice wine vinegar
  • 1/4 cup Tamari soy sauce, or you may substitute coconut aminos
  • sesame oil
  • black and white sesame seeds
  • 2 Tablespoons olive oil

Directions for Salmon:

  • Preheat oven to 375 degrees F.
  • Grease a 9 x 13 baking dish with olive oil spray.
  • Place salmon skin side down in baking dish.
  • Mix all other ingredients together and brush over the top of each salmon fillet.
  • Bake in 375 degree F oven for 15-20 minutes, salmon is cooked when it flakes (separates easily) when you press down on fillet with a fork.

Directions for Farro “Fried Rice”:

  • Rinse 2 cups of farro and drain.
  • Boil 8 cups of water in a medium sauce pan with 2 teaspoons of salt, then add farro, bring back to a boil, reduce heat to medium-low and cook 30 minutes or until tender.
  • In a separate pan, heat 2 tablespoons of olive oil over medium heat.
  • Add garlic and carrots and cook until softened.
  • Add peas, ginger, scallions and soy sauce, reduce heat to medium low and continue to cook 5 minutes.
  • Make a small well in the middle of the mixture and crack egg, stir until well mixed.
  • Add rice vinegar and sesame oil, reduce heat to low and simmer for 3 minutes, then set aside.
  • When farro is tender, drain the water.
  • To complete, spoon farro into a serving dish and add the sauteed mixture, stir until well incorporated.
  • Top with sesame seeds and serve.
